Sausage Pasta





I have totally plagiarised this recipe from Jamie Oliver but when I say 'Jools Pasta' no one knows what I mean and I hate fennel along with spring onions two of the main ingredients. So I've tweaked it to death and renamed it "Sausage Pasta" which always gets a round of applause in my house at its mention for tea. If you like those ingredients the original recipe is at the bottom.

Ingredients

Warning you will need a food processor or equivalent.  

1/2 an Onion
2 Carrots
2 Celery Sticks
1-2 Fresh Red Chillies or 2 tsp Chilli Flakes
1 x 6 Pack of good quality sausages - I've tried this with Richmond but there is too much fat and it isn't the same.
1 tsp Oregano
500g Penne Pasta
4 cloves of garlic
4 tbsp Balsamic Vinegar
1 x 400g tin of chopped tomatoes.
A few sprigs of basil.

1. Trim the Onion, Carrots, Celery and chuck in the food processor with the chillies and whizz for a second. Add the Sausages and oregano and pulse until well mixed.








2. Fill a large deep pan with water and get it boiling. Put a large pan on high heat with a glug of olive oil.




3. Spoon the sausage mixture into the frying pan breaking it up and stirring as you go.




4. When the pan of water is boiling add the penne and cook as the pack instructions. 




5. Crush the garlic into the sausage mixture and stir in 4 tbsp of balsamic vinegar and a tomatoes. Add a bit of the pasta water to loosen if needed.





6. Drain the pasta , saving about a cup of the water.

7. Tip the cooked pasta in to the sausage mixture giving it all a good stir.




8. Add some of the pasta water until its all silky. Season to taste. Add some basil and grated parmesan.
